Whenever I put my Liberty 3s back into my ears, it defaults to “Normal” Ambient setting. I don’t ever use “Normal”, and I even under controls, I have that disabled that option.
Why do they keep changing from Noise Cancellation to Normal? And is there a way to prevent this?

I can’t say I’ve ever noticed mine doing that, but I usually use them in normal mode. I guess I don’t really pay that much attention to which mode they were in at shutdown and which mode they come back on. I’ll pay more attention, but in the mean time, I’d contact Support if it was bothering me:
