Thank you, my preparation for today’s meal. I’m making enchiladas. This is my home made salsa with some extra heat

In this recipe I use lime as my acid, now in my sweet and spicy garlic mango shrimp I do use a piri piri oil of my own making I do a lot of infused oils on the go so to speak. I use bowls good quality extra virgin oils ( every thing from olive, sesame, avocado etc) along with my own spices depending on my mood and the dish. Personally with fresh salsa I prefer lime with good heat chilli garlic cilantro and some fresh cracked pepper and sea salt
When we were in Portugal this May I met Emanuel.
Was my neighbour in a little village close to Braganca.
He got his own wine and his own oliveras “aceite” (olive oil)
We tested it , absolutely the best.
comparing to those from the supermercados.
Easy to test : some oil with a little bit of white bread.
Its not only the acid which makes the taste.
Mild ones are ca < 5%, stronger ones up to 10% acid
